Pumpkin soup with chestnuts

What better way to savor the flavors of autumn than with a seasonal soup? Slowly browned by the sun’s gentle rays, pumpkin and freshly-picked chestnuts will enhance your soups for evenings shared with family and friends.

Prepare a soup

for 6 people


Ingredients

  • 1 pumpkin
  • 300 g chestnuts
  • 2 large carrots
  • 1 large onion
  • salt and pepper
  • croutons (optional)
  • cumin (optional)
  • milk (optional)
  • crème fraiche (optional)
  • parsley or coriander for decoration

Preparation

Preparation time: 45 min.

To begin, cut a slit in the chestnuts and place them in simmering water. Cook for 10 min. At the end of the cooking time, drain the chestnuts, cut them into 2 and scoop out only the flesh with a teaspoon. Set aside.
Wash the pumpkin, remove the seeds and cut into pieces. Set aside again.
Wash, peel and slice the carrots.
In a casserole dish, sauté the chopped onions in a little olive oil for 5 minutes. Add the pumpkin pieces, sliced carrots and chestnuts. Cover with water, salt and pepper (+ cumin). Cover and cook over medium heat for 30 minutes.
At the end of cooking, blend to obtain a smooth soup.

What accompaniments?

A good homemade soup can be served in a variety of ways. For a quick snack, vermicelli and bread croutons will do the trick. If you’re looking for a more substantial accompaniment, opt for grated cheese.
