Ingredients
Serves 6 :
- 250 g flour
- 200 g salted butter
- 200 g caster sugar
- 10 g baker’s yeast
- 10 cl water
- 1 pinch flower of salt
Recipe
1. Mix the flour and baker’s yeast in a bowl, make a well and pour in the warm water.
2. Work the dough until it is just sticky to the fingers and leave to rest until doubled in size.
3. Prepare the butter/sugar mixture; it should be smooth.
4. Dust the work surface with flour and roll out the pastry as thinly as possible.
5. Spread the butter/sugar mixture over the pastry.
6. Fold the pastry in three lengthways, then a second time widthways and flatten to remove any air bubbles.
7. Fold into a triangle, place in a mould and leave to rise a second time.
8. Cut grooves in the top of the pastry with a knife, then brush the egg yolk over the top of the pastry to brown it.
9. Place in the oven for 20/25 minutes at 180°.
Serve warm the same day!
