Ingredients


Serves 6 :

  • 250 g flour
  • 200 g salted butter
  • 200 g caster sugar
  • 10 g baker’s yeast
  • 10 cl water
  • 1 pinch flower of salt

Recipe

1. Mix the flour and baker’s yeast in a bowl, make a well and pour in the warm water.
2. Work the dough until it is just sticky to the fingers and leave to rest until doubled in size.
3. Prepare the butter/sugar mixture; it should be smooth.
4. Dust the work surface with flour and roll out the pastry as thinly as possible.
5. Spread the butter/sugar mixture over the pastry.
6. Fold the pastry in three lengthways, then a second time widthways and flatten to remove any air bubbles.
7. Fold into a triangle, place in a mould and leave to rise a second time.
8. Cut grooves in the top of the pastry with a knife, then brush the egg yolk over the top of the pastry to brown it.
9. Place in the oven for 20/25 minutes at 180°.

Serve warm the same day!

The origins of Kouign Amann

Born in the XIXᵉ century in Douarnenez, Finistère, kouign amann is an emblematic cake of Brittany. Its name literally means “butter cake” in Breton (kouign for cake and amann for butter). Legend has it that it was born of a mistake or lack of flour: to compensate, a baker added a lot of butter and sugar to his dough. The result was a caramelised pastry, crispy on the outside and melting on the inside, which was an instant success.

The secret

Traditionally, kouign amann is made with simple ingredients – flour, yeast, butter and sugar – but its richness lies in the flaky texture obtained by long turns of the pastry, similar to the puff pastry technique. A symbol of Breton generosity, it is now made all over the region and appreciated far beyond its borders.

Tip:

  • You can use a bread machine and make this kouign amann with bread dough.
